Finamul 97 SSL (Sodium Stearoyl-2-Lactylate) produced from raw materials derived from vegetable origin. It finds extensive use in the manufacture of yeast raised products as dough straighteners & crumb softeners.
It imparts greater dough mixing tolerance and it has less tendency of dough to collapse during machine handling. It also increases bread volume and softens the crumb and retards the staling.
